Ce dimanche, j’ai repris les bases de mon menu classique franco-nippon, à savoir le miso+yakitori+soba, déjà exposé ici en magret, mais en l’adaptant aux produits du jour. Il marche très bien avec un filet de porc. Et cette fois j’ai pensé à prendre des photos !
Le menu (tout home made) était donc :
- soupe miso
- filet de porc sauce yakitori
- nouilles soba sautées
1- le filet de porc sauce yakitori :
Comme je l’ai dit, on reprend la recette du canard, la marinade du filet de porc est exactement la même que pour le canard. On prend les mêmes ingrédients en mêmes proportions (cf. photo 1 ci-dessus). J’ai coupé le filet environ 800g) en trois morceaux. C’est la cuisson qui diffère. Cette fois, j’ai choisi une cuisson façon braisé, en cocotte : d’abord faire dorer les morceaux dans un peu de margarine, les retirer de la cocotte pour la déglacer à l’eau, puis remettre les morceaux et napper de marinade (cf. photo 2). Laisser mijoter une demi-heure à feu doux et à couvert.
Pendant le temps de cuisson, je prépare les nouilles soba sautées (voir plus bas).
De temps en temps, j’arrose le filet de la marinade et je retourne les morceaux. Je veille à ce que la sauce reste à tous petits bouillons. Après une demi-heure, je découvre la cocotte, je monte le gaz à feu moyen, et je laisse réduire la sauce jusqu’à obtenir une consistance sirupeuse (cf. photo 3). Cette opération dure environ 10mn. Je continue d’arroser les morceaux avec la sauce. A la fin, les morceaux auront pris une apparence laquée.
2- les nouilles soba sautées :
C’est une adaptation du yakisoba, recette traditionnelle de nouilles soba sautées au wok avec porc, oignons, poivrons, gingembre, champignons et chou. Les nouilles soba sont des sortes de spaghetti, à base de sarrasin. C’est un plat complet, mais ici je l’ai fait en accompagnement, donc sans viande dedans, et en changeant certains ingrédients.
D’abord, préparer tous les ingrédients (cf. photo 4) : j’ai émincé deux oignons, un demi-poivron et un demi-chou (chinois) en lamelles ; j’ai fait gonfler les champignons shiitakés à l’eau chaude ; j’ai mis une grosse poignée de germes de soja dans une assiette et je n’ai pas pris de gingembre, mais j’ai fait griller des graines de sésame à sec dans une petite poêle. J’ai fait cuire les nouilles soba juste al dente (4 mn) à l’eau salée.
Ensuite, faire sauter au wok, dans l’ordre et un par un : oignons, poivrons, champignons, soja et chou. C’est une opération à faire rapidement, par petites quantités, en secouant le wok (cf. photo 5) pour que les ingrédients soient justes saisis, sans attacher ni brunir. Quelques secondes à chaque fois. Les feuilles de chou seront juste fanées, le reste sera juste croquant. Je termine en mettant les nouilles dans le wok, que j’arrose d’un trait de sauce soja et de quelques gouttes d’huile de sésame. Je remets les autres ingrédients sautés, et les graines de sésame. C’est prêt à servir (cf. photo 6).
3- La soupe miso :
J’ai proposé une recette de soupe miso « façon shinji » ici. Celle que j’ai servie ce dimanche a exactement la même base : bouillon de dashi instantané + pâte miso. Je rappelle que pour réussir une bonne soupe miso, le bouillon se fait toujours au dernier moment, juste avant de servir. Pour ne pas perdre de temps, prévoir d’émincer la garniture à l’avance. Cette fois, j’ai garni la soupe d’échalote hachée, de haricots verts cuits coupés en petits tronçons, de shiitakés émincés, et d’algues nori (cf. photo 7 : le sachet vert avec un point rouge contient le dashi d’algue en dosettes, le paquet turquoise en haut à gauche contient les algues nori, et celui en bas à gauche la pâte miso).
La soupe est servie chaude mais non bouillante dans de petits bols, j’ai ensuite servi le filet de porc, coupé en tranches et nappé de sa sauce yakitori, accompagné des nouilles sautées. Un languedoc rouge (on est en France, tout de même) a bien accompagné les plats. En dessert, juste des clémentines. Ce fut impec.
